M&M Cookies

My parents sent Keenan a couple of giant bags of M&M’s, so tonight I thought we’d bake some cookies with some of them. I have a really good recipe for chocolate chip cookies, but I thought I’d search around for a recipe that called specifically for M&M’s. I found this recipe. Oh. My. Gosh. I am loving these. If you ever find yourself with an extra two cups of M&M’s, bake these.

M&M Cookies
adapted from Bucky’s Barbecue and Bread

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 egg
1 egg yolk
1 tablespoon vanilla extract
2 cups M&Ms (or peanut M&Ms)

1. Preheat the oven to 350 degrees F. In a medium bowl, combine the flour, baking soda, and salt and set aside.
2. Beat together the melted butter, brown sugar, and white sugar. Beat in the egg, then beat in the egg yolk. Beat in the vanilla.
3. Gradually add the flour mixture to the sugar mixture until just moistened. Mix in the M&Ms by hand.
4. Roll into balls, place on a greased baking sheet, and press down on it with your palm a bit to flatten (not too much!). Don’t forget to flatten!!!
5. Bake for 10-15 minutes or until the edges look golden brown. Remember that they need to cool on the baking sheet, so even if they don’t look quite set, it’s okay because they continue to cook after you remove them from the oven.

    arg! not just an egg but a yolk too! though they do sound wicked yummy. Eat a couple for me.

      I know :( I ate a few…so did Keenan. Between the two of us, we probably ate enough for your whole family!
